So, earlier this week I got a new smoker. Oklahoma Joes Highland offset smoker. I wanted a stick/charcoalburner.

We assembled it on Wednesday, no issues and it was quite easy.

Fired it up yesterday to start seasoning the new baby!

Yesterday I smoked for 4 hours. After I was almost done I cooked (6) 1/2 lb burgers.

So today was the real test. I picked up in a pork shoulder and figured I would go for it today.

Turned out rather well. 9:8 lbs of heaven! It was juicy, and turned out well.

thought I would share.

looks great, take them unused racks out and hang them up till you need them, no need getting them funky for no reason
 
Thanks folks! I will eventually pull the lower racks out but want them a wee bit more seasoned. I may direct cook with this on occasion.
