new smoker build

Hey SMF

I enjoy smoking meats whenever possible, have done some small cookoffs the past few summers, also make all my own sausages from our venison. my dad and I just got a double door ss commercial fridge and are looking to convert it into a smoker. We are going to be using electric heat element ( probably the brinkman 1500w) and we were thinking about the bradley smoke generator. I have been looking around on this site of lately looking for ideas. I dont know if we should have two heat elements, is this the right smoke generator, what thermostat-temp control device should I use. I guess I am just looking for advice.

We will smoking hot and cold, multiple red meats, poultry, pork and fish for the most part. any ideas greatly appreciated. I will try to get some pics up as soon as possible.

minnie12,  Afternoon and welcome to the forum.....  there are many smoke generators on the market....  There is one in particular that a lot of folks on this forum use.... The Amazin Pellet Smoker...      T Johnson,  a member here, designed and built it specifically for cold smoking and electric smokers..... It will work almost anywhere...    no electricity.... it does not create creosote like some smoke gens....  fairly priced...   and he has an assortment of pellets that are 100% what they are described as....
