I am looking to build a smokehouse and I have a few questions.

Who all has a smokehouse that uses wood for heat and smoke?

I want to be able to hot\cold smoke and would like something similar to Cowgirls design. Anyone have links to plans similar to that?

I made my first smoker the other day.  I would definalty make changes to it.  I am still waiting for my grill grates to come in.  But this is about 2ft by 2ft inside.  I plan on putting in 3 shelves.   I wanted my first one to be small in case I screwed it up. I live in MI so I insulated in the inside with firewall board.  ITs used to insulate fireplaces to keep the heat in.  This is what im using during the winter months to smoke.  I have since removed the legs and have it resting on blocks.(I wanted to be able to move it.)  I liked all the pictures i found of the big smoke houses using a venting system.  So I decided to put it on this one, best decesion I made on this build. I dug a hole and put 2 fire bricks about 10" apart.  I dropped my venting system on top of the bricks and then buried around the outside with dirt.  I use a firepit to heat up a bunch of coals and then I put the coals inside my bricks and throw on top a white or red piece of oak. I have no damper and I am able to maintain heat between 225-250 for pulled pork for 12 hours and all I do is throw on a log every 25-30mins. If you have any questions I can help you out the best I can.  (My wife hates this thing lol but it does turn out good food.)  I plan on building a bigger one in the spring with an underground venting system.
