Hi all,
A new set up for me is to try my hand at cold smoking. Using the fire box in my drum smoker and piping the smoke (fan assisted) into an adapted whiskey barrel.
Anyone got any tips with a method like this before I spoil a load of food learning on the job?

Get things going and before you put food in it.. check the temps and make sure they're not exceeding your expectations. If it's too hot, you may have to use a pan of ice or similar to cool the smoke down.

It appears more complicated that buying a tube and some pellets and cold smoking that way but I am interested in seeing how this turns out

Thanks for your interest.
I did a test run to see how the pipe work held up and the temperatures. I started a little hot at first and the fan made some complaining noises, but eventually it kept a good steady smoke for 3 hours with minimal intervention required.
