Jerry,

Yeah, I have seen different opinions in some of the big boys' books too.

Are you going to strike the Cold-smoking section entirely, due to too much confusion?

Thanks for your replies,

Bear

Bear that's Jeff's call I think its a good section to have many people are very interested in cold smoking. Heck I try to cold smoke when I can tho my smokehouse with a metal roof sitting in the Florida sun makes it hard most of the time I do try when possible. I want to build a new smokehouse so that it would be easier to keep my temps lower. If you look at my belly bacon threads you will see I don't care about temps except to keep them as low as possible so as to not render the fat and just impart smoke. I haven't done cheese yet but its on the list when I can keep the temps low enough

Yup, I know you always do your Bacon low. I'm going to do my next one like that too, now that I have that A-MAZE-N-SMOKER. Since it will be real soon, it'll probably still be up in the 90˚ to 110˚ range because I doubt I'll bother using any ice. I'm planning on using nothing but the AMNS this time, and maybe open the door now & then to keep it down.

It'll be nice to have a cold-smoke section, but to avoid total confusion, maybe there should be some guidelines to follow so we don't have to sprain our brains (especially us old guys), as to what section to post in.

Jeff always seems good at making the call. Let him strain his brain again. Don't tell Jeff I said that-----

I vote for under 100* F for the new "Cold Smoking" section.  This could be a place for "Tips and Tricks" and advice on food to Cold Smoke. Squirrel had a great post for some things that many of us would never have thought to smoke.

Just my 2 cents worth.....

Great Job Piney!!

Just took a peak at the new section.  I looks a little lonely, but I'm sure will find some friends very soon!

Jerry,
I just started a thread on there last night, but when you go there, your first thought would be (at least mine is), "Is what I'm doing actually cold-smoking?".

I agree with Todd, Why not put a notation there, like:

Cold-Smoking, (Smoker Temps no higher than 100˚) or (Smoker temps no higher than 120˚) or (Smoker temps no higher than 90˚).

Something to tell the person they are on the right category.

Just a suggestion (Kinda what I meant in the beginning of this thread).

Thanks,

Bear
