Hello everyone, glad to have found this forum. I recently bought a CharGriller Duo and added the smoke box. It is my first time using a charcoal smoker, had an electric one before. Anyway, when I smoke my baby back ribs I use the 2-2-1 method and the flavor is great, however, I would say the middle 50% of the rack has a perfect tenderness, the outer 25% on either side are a bit tough. I don't know if they are overcooked or what. Any suggestions on how to get a more even tendernous from one end to the other. Thanks.
