Yeah, I'm about ready to go down the same rabbit hole soon. If nothing else, I can use the PH doodad on the pool water to check PH lol

lol!! Next is starters and used fridge and a slew of other things to embark on this curing chamber idea
 
I'm in for the ride. Don't hesitate to ask...I'll answer any and all questions! There is a lot going on and you gotta get it just right. One tip I'll throw out right now-get a govee temp, and RH% monitor. Money well spent for dialing your chamber in perfectly. Don't worry about the swings, it's the avg. you are looking for which the govee will give you....no guessing.

You were going to be my first person to ask questions as i followed your big build! i appreciate the heads up!! any preference to controllers inkbird vs other ones?

I use inkbird. They work, but not as tight a range as Auber. But if you use a calibrated govee monitor, you can use the govee to dial in the inkbird humidity controller. It works.
 
Well you motivated me to get a new PH meter. I been using those cheap ones. Did not get the one got but a middle of the road one.
 
i bought myself a cheap ph meter but it doesn't come with any cal fluid or cleaning /storing fluid. They sell all that stuff on Amazon but not sure about the procedures. When you get into all the cleaning/storage of the probes I would be interested it the process of that.

So does the Apera have a replaceable glass tip? I run the Hanna brand and it’s tip is non replaceable, kind of a down side, but mine works well as long as I store the tip in solution.

Yeah, the tip is replaceable....but not cheap. $150-160 last I checked...
My Milwaukee replacement probe is less than $100.

Incidentally, the probe is a consumable. Only lasts 2 years tops....then must be replaced.
 
Well, dove off the deep end. i think ill be good with starter cultures for a while like a few years LOL. i already own a humidifier so were are good on that once i get everything i will start building

@indaswamp what your take/opinion on Marninski's book stating that you should do a cook step...? a bit confused there kind of contradicted the whole point of dry cured meats? is it something you practice? the paragraph called "Safety Options And Examples of Validated Processes"
