I ordered my new REC TEC and it's due to arrive in 4 days. My question: I've read the manual but it mentions nothing about seasoning after the initial 1 hr 400° cure.
Is there a reason to season it with say bacon before using it? My guess is that because the inside is all stainless, no seasoning is needed but I'd like opinions.

Right. Just run it high to burn off any residual manufacturing oils, but no need to cure unless you need an excuse to cook some bacon.

Is there a needed excuse to cook bacon, other than the fact it's bacon?

And yea, just do the first seasoning to burn out any nastiness, and you should be good to go.

Thanks all. I can see it with cast iron but not stainless but thought I'd ask just in case. I also ordered the sear plates which are aluminum I think. Maybe I'll cook up some bacon on them just to be safe.

Only thing I'd say is don't go off the hour that you mentioned. You can usually smell the crap being burnt off. I would give it a good while of a burn in or at least at the hour mark step away from the grill area for a good 5 mins then come back in and pay attention to the smell. If it smells clean if say you're good. For me I could still smell something off so I just did it till I couldn't.

Rmartinez2 - I know exactly what you mean, and thanks, I will.

PS, can't wait. I have a rack of ribs, thick chops and a pork loin just waiting.
