  How much maintainance and cleanng should I do to my smoker after a smoke. Is it better to leave thing as there are and build up a crusty ambienance or should I kepp my smoker spick and Span? What makes for the best smoke?
 
I've been soaking the grates and drip pan, then wiping down the inside with just water (no soap!).  Also be sure to wipe down the door seal each time.
 
Let the inside go.  If it gets to much I just gently scrape off a little.  The grates, water pan, and drip plate (in The Bottom) can go in the dishwasher.  Do not put the black grease collector from the outside into the dishwasher.

I usually line the water pan with foil if I am not actively using it.
 
I have yet to clean the inside of mine.  I just clean the removeable items IE racks, drip pans ect. 

The maintance book says to only wipe out the inside, no soap,  as the stuff builds up inside, you get more flavor IMO
