Hello everyone.  I'm new to smoking and just bought a Brickman entry level electric smoker.  So far I've smoked 2 turkey breasts and a salmon fillet.  Both turned out great and I'm anxious to continue this new found art.  While looking for brines and cooking tips for the salmon, I found this forum and was really impressed.  Thanks for sharing your smoking experiences.

While cooking the salmon, my wood caught fire but, thankfully, I caught it in time.

I'm looking forward to learning more.  Smoking is so much better than grilling on a gas grill.
