Just wanted to say hi, and introduce myself. I've lurked around the forum for many years, as it has been a great resource. I've been smoking meats for seven years now, cut my teeth on a smoke hollow 4-in-1, and after three years upgraded to the yoder durango (big family). I'm looking forward to learning much more as an active member, and hopefully helping some folks out along the way.
 
Thank you all for the welcome. First time ever doing smoked corned beef today. Ran at 275 in the stick burner for 2hrs, then braised for 1.5hrs once I hit 165 IT. Probed soft at 210. Didn't soak prior since this was a first try, wanted to see how it would be without.
