new member from Canada

Hello everyone,

My name is Peter, and I live in Canada's capital, Ottawa. I recently purchased a Black Olive Ceramic Pellet grill/smoker. After finally diagnosing a faulty rheostat, I love my new toy. My family's favourite item so far are the back ribs that I smoke. I have most recently smoked some aged cheddar, with some apple pellets. I now have to wait about 4 weeks to try it out. I smoked it at about 80 degrees with an ice bath underneath it.

Welcome to the forum neighbour! Baby backs are one of my family's favs too. Never smoked cheese but on my long list of things to try!
