I have my smoker, i have my charcoal/gas combo grill but NOTHING beats a kettle grill!   It's been forever and a day since i grilled on a kettle and forgot what i was missing.  Just finished breaking it in with some simple onion soup burgers reverse sear style, nothing special but what a difference those grills make. Throw in your charcoal for indirect heat with some wood chunks on the coals and grill away.

Not anything against people that use gas grills because they do have a purpose but for the most part gas grills have RUINED barbecuing....at least that's what happened to me for years before i found my way home to charcoal and smoke.

Kettles don't look like like anything fancy which is why some people shy away from them imo but they have a spot in every ones bbq arsenal.

Welcome back to the charcoal my friend.  I wandered away myself but quickly found my way back to the straight and narrow.  When in the Army I would cook on the kettle in the little Italian neightborhod I lived in.  The neighbor who used to come for cookouts and learned how to use it got the kettle when I left. He used to call me the crazy BBQ guy cause I cooked, rain, snow, or shine.   When I got home I went gas and it didn't take long till I was back on the kettle.

I went way way longer than you going w/out charcoal....unfortunately.    Monday for the NCAA championship i'm smoking some wings and i know where they're cooking.
