Been lurking for a while and recently joined. Figured it’s time to say hi.

I’m not brand new to smoking but I’m no pro either. Just did an overnighter last night and it turned out extremely well. Was an 8lb bone-in pork shoulder to make pulled pork. It’s my families favorite. About 11 hours 20 minutes cook time on my WSM 18.5”. Love this smoker! Left it unattended for 8 hours and when I went to check it the temp was right were I left it the night before! Tracked it with my igrill ambient probe/sensor and the graph was basically steady all night.
