Hello.

I've read a lot of the threads in SMF and now I'm ready to participate in the forums so, I created an account today.

I have a CharGriller 5050 with side fire box.  I mostly smoke poultry or grill whatever on it (I can't control the temps well enough to do anything that takes low-n-slow.).  I also used it to cold smoke about 20 lbs of cheese around Christmas (extra sharp cheddar and pepperjack gave me the best results.) I recently purchased the Masterbuilt GS40 but I haven't even had a chance to season that yet.  I like to use apple, oak and hickory wood as it's fairly easy to get locally.  I have some plum trees on property and have used some wood from that and like it as well as I like apple.

I'd like to have a summer of smoke and do several butts and ribs.  My problem is finding blocks of time to watch low-n-slow smokes, but I suppose as I get more familiar with using the GS40, I won't have as much of an issue.

Welcome to the forums!  You've found a great place to learn and share ideas on our favorite pastime...Smoking and Grilling great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Just ask when you need help and you'll get plenty.
