Hello all,

My name is Derek from New Mexico.  I am a student of Mechanical Engineering at New Mexico Tech, and in a much less official capacity, a student of Culinary Engineering in my own kitchen and back yard.  I recently got a Little Chief from my friend and have since smoked Salmon, Trout, and Pork Tenderloin all pretty well.  I have come to ask some questions and share my findings when I can.

Hi Derek,

I just moved to Santa Fe from Minnesota (None too early!), and are loving it! Seems to take a little longer  here on a typical smoke, I assume because of the altitude change-  But it's still a treat!  Can't beat the Little Chiefs for fish, Happy Smokin!!
