I have seasoned the smoker and kept the fire going with oak and hickory. The oak wood (some split some not) burned slower than the hickory did. I had 2 slabs of spare ribs smoked at 250 temp majority of the 4 hrs. Laid them in the smoker away from the fire. It was my first time using this brand new smoker and the ribs came out smokeless. I wonder If meat placement is the problem. I added pictures a little help is greatly appreciated.
Normally I smoke on my Oklahoma joes and everything is great pictures of my go to pitts are Oklahoma joes

Looks like a nice collection of smokers. Would have thought you would have had good smoke flavor after 4 hours of smoke. Might have to move the meat closer to the center of the smoker.

Thats what I was thinking maybe I had the meat to far from the fire. I had the slabs all the way to the left of the dual door smoker.

What kind of shape was the wood in? You want it seasoned well but not at the rotting point it seems to loose smoke flavor and heat when it starts getting to the rotting stage.
I usually use splits a couple inches shorter than the width of my smoke chamber door and diameter about like a magnum sized beer can. Have to add splits more often using the smaller splits but it's much easier to control temps

From a fresh cut of oak. it seasoned the better half of 7 months still seemed a bit moist though. But I also had store bought B&B hickory

This may sound dumb but do you have any leftovers? If you do they will taste totally different the next day. I have the same problem when smoking. Your body and taste buds have been bathed in smoke all day long and I just don't taste it.
Sometimes even a shower will help. Hope this makes sense to you.

It totally dies and its totally true. I dont even eat my bbq until the next day. A taste here a taste there but I want jus sit down and eat it. Bbq’in ruins the appetite until the next day.

This pretty much every single time... was going to make this comment if not already made. Everyone that I feed talks about the perfect smoke on the meat the day I cook it, I can't taste it at all until the next day.
