HI im new to this site and to the world of smoking meat verses grilling , smoking that ive done for last 12 years. i recently took my used (once) charbroil charcoal smoker and added an electric hot plate and a few modifications ( steel bottom, temp guage) to make it easier to maintain a constant temp without changing charcoal as much, the problem is the temp with just the 750 watts hot plate is running 150 degrees but with a few charcoal pieces and some chips it ignites and goes well over 300. Do i just need a hotter plate or maybe leave out the charcoal and just go hot plate and wood????? thanks for any and all help
 
1000 watt plate should give you a 225-250 without the coals. It sounds like you are trying to quit using coals and find a easier way to maintain your temp?

For $59.00 HD has a Brickman electric. Nice unit for the money with having to mod the hell out of your old coal unit.

thank you for the info , mind me asking if hd is home depot? ill check that out , being that fathers day is around the cornerill try and persuade the family (4) to get me a new one, the one i have is over 10 years old and has been cooked on one time. i do alot of griiling on my gas grill and even alot of indirect cooking using only 1 or 2 of the five burners at once, this works well but dont have that lip dripping tatse like smoking does, thanks agin for your help and thank s for such a great forum. , i forgot to give other info about myself, im 35 years old love to cook and grill indoors or out. desert or appetizer, mainly meats . i have a coleman 3 brner gas grill with side burner , my newset is a uniflame 5 burner with sideburner, i do use a smoker box alot with these. avid cooker and also make handcarved fishing lures. thanks
