The neighbor had some of my pulled pork last weekend & loved it. I did spare ribs today & brought the last couple over for them to try.

Where I need help is he said if I find a recipe for prime rib he will by it & have me smoke it. When someone else buys the meat I don't want to screw it up. If I mess up my meat it comes out of my pocket & no one has to know I messed up. Prime Rib is $$$ Not that I am nervous but I want a good lot of smoker recipes to choose from & come up with my own from the lot. I also need an idea on the time needed. I also need to know the best internal temp to reach.

That should be most everything you need to know to get started. Nothing to it really, just intimidates folks because of the cost I guess. If you need more info just post your questions in the "Beef" section of the forum and we'll get you the best help we can.
 
I look at it this way. When you are cooking that slow it is kinda tuff to screw it up. Just make sure you hold your temps down and keep plenty of moisture in the smoker and you should be fine. My biggest concern are those two. Temps and moisture. Good luck and enjoy!
