Have a friend who is on the tale end of his time on the planet. Dave has some sort of lung ailment that required a transplant. For various reasons he couldn't get on the donor list. Want to make him and his wife dinner. Probably pulled pork.Dave is a diabetic. The rub we use has a fair amount of sugar in it. Can anyone suggest a rub/recipe that doesn't have sugar in it? Thanks in advance for any help/suggestions.

Truvia would work if you want to stick with tried and true. 

Pork butt is great pretty much any direction you go though. It is naturally sweet enough that just about anything will work.

I make a spicy pulled pork rub that we use for carnitas that is just black pepper, cumin, onion powder, garlic powder, salt, and cayenne.

Rub:

1 TBS Cumin (my family loves cumin so you may want to cut this one down some)

1 TBS Black Pepper

1 TBS Garlic Powder

1 TBS Salt

2 tsp Onion Powder

1-2 tsp Cayenne (depending on how spicy you want it)

Smoke as usual for pulled pork, saving the drippings to add back to the meat later.

It makes great tacos, fajitas, or whatever Mexican dish you want to put it in.

When we're doing fajitas I'll sautee garlic (3-4 cloves), onions (1 medium), and poblano peppers (may add squash if I have some out of the garden) with marjoram and oregano (tsp or so of each) then add the pork juice and pork to warm up on top of the veggies. Throw it on a scorching hot fajita plate and it's good to go.
