hi all, is there a rule of thumb when to stop adding smoke so you dont get to much. i no personal preference but.and does the plateau happen all the time or just now and then. thanks for the input
 
No rule of thumb on time, you control the smoke flavor more by the type of wood you use.

 as for the plateau. At smoking temps most large cuts will have a plateau. How long it will last? who knows.
 
Lots of folks feel 3-4 hours of smoke is plenty...Others figure if it's in the Smoker keep making Smoke...I think Type of wood has a great affect on flavor...Mesquite is very strong followed by Hickory...Oak, Pecan and Fruit woods are milder...

Plateau or Stall happens with larger cuts...sometimes long, sometimes short...Check this out, pretty much explains it all...JJ

thanks for the responce jimmy and the link it explained alot just curious do you use the foil method or the hard bark method,anyway thanks again
 
bngood I will fill a coffee can with chips and chunks cover with double heavy duty foil punch a few holes in top, when its done smokeing thats enough for us. When I started smokeing I kept filling the can 3 or 4 times to much smoke and creosote.
