I put my back bacon on at 180 to cook today before going out for Mother's Day.
Last time it took 6 hours
It's now 7 hours and I'm still 20f away from 155 it.

How hot can I bump the temp to push ot through?
 
Just let it smoke at 180.

I can't.
I was supposed to be at moms for 3 pm. It's now 316 pm.

What's the highest I can push the cooking temp
 
I did think of that. That's a last resort.

I read a thread where the guy had it cooking from 200-225 over 3 hours. I've bumped it to 225
