Hello everyone!
I need advice about chicken marinating
I know I'm not quite on the topic, but still the most suitable place that I could find :)
What secrets do you have for marinating chicken? I have some good and flavorful recipes BUT!
When I cook chicken, it very rarely infuses the marinade into itself. the meat becomes soft and juicy, but it is the taste that remains practically the same (I'm talking about the meat itself, not the skin). I also tried to marinate without the skin, make cuts - all the same, the result is not what I would like. please share your methods!
I will be grateful for any answers!

Just use a basic salt, sugar and water brine for a few hours to tenderize and use a rub and/or sauce on the outside for flavor. It should soak into the meat a bit.
If you're doing a "beer can" chicken you can add flavor to the liquid in the can.
Other than that there's not a whole lot you can do with chicken....

You can inject whatever flavor profile you are trying to achieve. I also enjoy brining boneless breasts in pickle juice and wrapped in bacon afterwards

As mentioned injecting works well, you could set some of the brine a side and baste your chicken as it cooks.

I have not experienced this method before. I am familiar with the bacon, but may need to try the pickle juice just to understand the flavor profile. How long do you brine them?
