Hello I am smokeinv a 13 lb brisket I started my smokeing last night at 2330 I am using a oaklahoma joe highlander I planed on smokeing this brisket from 2330 last night until 1630 today I took a 1 HR cat nap at 0100 endeded up waking up at 0430 this morning , before I took my little nap I made sure my smoker was burning at around 230 ish ° WHEN I woke up I found my smoker was burning around 160° ish .... Is my brisket going to be alright or should I toss it ? I was able to crank the heat back up to a steady 220°
 
Couldent help it I was exhausted promised my buddy a briskit for his bbq today and red bulls weren't cutting exhaustion ... Oh well I hope it turns out tender enough and safe to eat
 
That leaves me out .


I've never even tried a brisket on my SQ36 Rich, did one on my electric a long time back, took about 18 hours as I recall. There'd be a real conflict with my drinking time if I tried to stay awake that long.. That's another great factor of beef ribs, tastes just like brisket on a stick, 8-9 hours max! RAY
