n00b smoker looking for assistance

Hi there,

My name is Jen and I have been wanting to get into smoking meats and cheeses for a while... I was gifted a used Coleman Outdoorsman Smoker last year and was told "I think I found all the parts"... I don't think they did

and I'm pretty sure some are missing...  anyway. I put it aside and left it alone for a year.

This year so far has been the "year of food classes".  I've taken a butchering class, a cheesemaking class and soon a bacon curing class... and I want to smoke all of these things! 

Since I'm such a n00b, and I'm not sure what is missing from my smoker (and Coleman bascially said "sorry, we don't make those anymore") I thought I'd seek out the wisdom of those who are in the know.

Welcome Jen! Sorry I can't help ya out on the Coleman. I can't believe you've waited this long to smoke something! Hopefully someone will give ya some info. Otherwise, a good, not necessarily expensive, smoker may be well worth the expense. 
 
Welcome to SMF Jeni! There are a lot of people here who will help you become a great smoker!

I'm not familiar with the Coleman smokers but I'm sure there is someone on here that is. You should start a new thread and post some pics of what you have and maybe we can figure out if you are missing anything or what you can do to get it working for you.

A pic of the parts you have and a little additional info would help.  Looks like a basic upright water smoker.  Is it charcoal or electric?

Jeni, evening and welcome to the forum.....   Don't worry about smoker parts for now.....  You are into cheese and bacon ???? All you need is an AMNPS (smoke generator from Todd) and a cardboard box so to speak....   The two items you listed above are best cold smoked..... This forum is full of info and folks willing to help.... It may be addicting..... enjoy the long smokey ride....   Dave  
 
evidently there is a lot to learn! oh and I'm into cheese and bacon and anything on a hoof.  I'm looking forward to my first rack of ribs!
