Been busy with work, putting new windows in house and bonding with my new LCD Sony HDTV :). So thats why I have not been around much... Just getting around to posting pics from last weeks smoke of a Chicken, ribs and Eye round.




About 1.5 hours into smoke I turned the chicken


Eye round done in 2 hours

Super Moist... Brined bird

Man that does look good, congrats on another successful smoke.
 
I'm wondering how the texture of hat eye-o-the-round was? I do one every so often in the oven and its good but I always find it a little on the chewy side. Please tell us how you did the eye.

Thanks for the kind words everyone.. Everything came out great..

BeebeQue, I did nothing special with the beef. It was a frozen eye round so I thawed, Rubbed with OO then a rub. I let it rest at room temp for a while while the smoker got running. But on smoker and pulled at 143. That gave me a med-rare eye round.
texture was good, due to the cut of meat it chews different then other cuts of beef. It was not real chewy, it was super moist and chewing it only made it taste better with all the flavor that came out of it.
 
Seaham that was some good looking BBQ, really got me thinking about what to smoke next. And it seems like you lucked out to. It looks like in the pic. of the chicken she must have laid 2 really big eegs. LOL.
