My smoked Prime Brisket last Friday

I smoked a successful brisket for once in my life. Smoked on naturally seasoned hickory with 15% moisture. The hickory was harvested late last fall.

It’s darn good, never been able to smoke a brisket this good. It was about time. Been working on my brisket smoking skills for the last two years. I was using kiln dried hickory and wasn’t liking the results. Purchased naturally seasoned hickory and was happy with the results. My process was the same. The Pit Master Club members at amazing ribs dot com told me use naturally seasoned wood. I am hard headed and decided to try it and the guys were right. I left Pit Masters last September. I didn’t want to pay the annual club dues.
 
Being in Hawaii I use only Kiawe which is a Mesquite. It is super available and even have a friend who scores me free logs from time from time. Have bought bags of hickory and apple from HD but don't like them. I feel like the kiln dried wood burns to fast and I don't care for it. Kiawe is great for everything I do.
 
Looks great, given a choice I would never use kiln dried anything, sometimes you have no choice, thats why the smoke profile with pellets is low, I add hickory bark in a pellet tube with my pellet smoker,

During my cook the smoke was invisible 85% of the cook. Visible smoke it was thin blue and could only see that against a low light background.

Amazing looking brisket there! I'm glad you are starting to nail it. It's not hard to do a good brisket, it's just easier to mess one up with everything that is involved :D
