After getting my a$$ handed to me on my first smoke, I reached out to some folks for help and things went much better the second time around.
Smoked ribs again on my Weber kettle using the snake method and I was able to get much better temps this time. It seems I messed up the snake method last time, not providing enough surface contact between briquettes.
This time I stacked them on more of a diagonal domino pattern and the results were great.
I choked back my bottom vents to 1/8th open and consistently held 225 ish temps throughout the 6 hour cook (3-2-1 method).
I think I may have overcooked them a bit, as they fell apart when I tried picking them up off the grill. I pushed the temps to 250 during the wrap, per some YouTube dude.
I also used too much bbq sauce, so will dial that back next time.
All in all, I was thrilled with the results!
