Finally had some time to try this cook, a bunch of us here seem to have had great success trying this recipe. I did it with pork loin as I had it on hand. First thing is to pull out all the spices needed first.
Pretty much followed his recipe so I won't spell it out here...no need to improve on perfection. Below is the meat getting "happy" with the onions, spices and marinade specified for an overnight.
The day of the cook I set out to make a chick pea salad with a lemon vinaigrette dressing...this turned out to be unbelievable and refreshing.
Salad
Now to make a quick cucumber tzatziki sauce, I don't use yogurt in mine, but rather sour cream, a little mayonnaise, red wine vinegar, garlic, plenty of dill and let it sit for a while.
Meat skewered up with some onions and grape tomatoes
Onto the kettle with scorching hot coals and some hickory chunks chucked on.
Pulled at 145+ with a nice char on them.
Now I wanted to try a recipe I found for a keto pita bread, I really wanted the "doughy" component for this meal.

This was an incredible meal, the meat was so flavorful. The chick pea salad was awesome and the keto pita actually worked very well. The wife went nuts over this meal and really glad we have enough for another meal. I was pleasantly surprised that hot and fast over the coals with a few hickory chunks gave some really good wood flavor...loving this kettle.

- 4 cups cucumber sliced and quartered (we used English Cucumbers)
- 2 can of chickpeas drained and rinsed
- 2 cup yellow bell pepper diced
- 3 cups cherry tomatoes halved
- 2 cup red onion diced
- 1 cup kalamata olives halved (I eliminated these as I don't like them, wife did not agree..lol)
- 1 cup crumbled feta cheese
- 0.5 cup fresh parsley chopped
- I then made the addition of some chopped spinach and fresh cilantro.
- 0.5 cup olive oil
- 4 tablespoons fresh lemon juice
- 3 tablespoons red wine vinegar
- 2 teaspoon dijon mustard
- 1 teaspoon dried oregano
- 0.25 teaspoon kosher salt or more to taste
- 0.25 teaspoon pepper or more to taste

- 1/4 cup Whey protein powder
- 3 tbsp Psyllium husk powder
- 1 tbsp Baking powder
- 1/2 tsp Sea salt
- 2 tbsp Avocado oil
- 1 tbsp Apple cider vinegar
- 3 large Egg whites
- 1/2 cup Boiling water
