I know this is an old thread, but I had a question regarding the build and materials. I'm planning this build right now and will be using OSB for the build along with 2x2 posts. Does this sound ok?

It's listed as hardwood plywood and would be for lining the inside and outside. I'll squish some insulation in between and it will all be framed with 2x2's.
Thanks Dave. That's reassuring. I believe if I add a couple cross braces that will help protect against over warping too. I'm going to be ripping the element out of my Old Smokey and using it in this thing also. I won't have any issues getting up to temp, especially since this will be an insulated box.Looks good to my.... I had a neighbor that made a cold smoker out of 1/4".... used it for probably 15 years.... drank Wild Turkey and took all day to smoke fish.... I learned a lot for him..

I'm going to put together a PID controller for the smoker once it's all put together for temp control. I will be doing a good amount of sausage smoking in it, so I will need the additional control.If you think the element puts out too much heat, you can always add a dimmer switch to the element and reduce the wattage output... I have done that to my MES 30 and it is a great addition.... controls the heat output like the knob on a gas burner....
