Well I had today off for a vacation and tried my first attempt at beef stix. What a learning experience. Did 5 lbs of hot stix and 3.5 lbs of jerky. Turned out great. I was worried about over cooking and drying the stix out, but you would need to fall asleep to over cook them.

Looks real good to me. Its a good thing I aint got me a stuffer or a grinder, or I'd be knee deep in sausage and jerky!

You dont need a grinder and I got the stuffer for about $15. I just used 4lbs of 90/10 ground beef and 1lb of bulk sausage. Mixed the seasonings and cure by hand in a big bowl. . Next time I will use all 90/10 ground beef. Also hanging them seemed to be a waste of time. These are my firsts stix and I am learning!!!
