My first try at 3-2-1, St. Louis ribs with Q view

This was my first time making ribs in the smoker.  I got 3 nice big racks from Costco for $2.49/lb.  Rubbed them the night before with Billbo's rub.  I used half hickory half cherry in my Smokin It #1 smoker at 225 degrees for the entire smoke.  No smoke ring bc  I'm using electric, but great smoke flavor.  Was my first time using cherry and I really liked it.  After three hours they looked kind of limp and gray, I foiled them, put a small splash of water in with the foil, back in the smoker for 2 more hours.  After the 2 hours they looked great, one bone fell out when I picked them up.  I cut the rack up into 4 pieces, one I kept with dry rub only, one with sweet baby ray's, two with Billbo's bbq sauce.  Back into the smoker for one more hour.  They turned out excellent.  The thicker fattier part of the ribs, the bones pulled right out and the meat was so moist it was almost like a pot roast the way it just fell apart.  The thinner end had a nice chew to it.  I didn't have a favorite, they were all delicious.  The best part is I still have two more full racks in the freezer!
