Home is Glendale, AZ.
Had to try it, MES 30 with AMNPS and maple pellets, temp set at 300 on PID for 2 hours.

Very juicy, skin was crispy but a dry crispy (left in fridge overnight after Jeff's rub was applied)Would do it again for sure, appearance was picture perfect! Thanks to those who offered advise on pellets to use.

That looks great.    Did the MES get to 300?
 
It did, I built a PID with Auberins components and it reached it and held it over a four hour period. That was my first test after the built and I was very pleased.

What mes do you have. I am afraid to run mine at high temps. 150 is the highest I go with it.
 
 I have the Masterbuilt 30" Model 20070910. It had the digital controller on the top which I bypassed (removed) installed a K type thermocouple and the PID. When I wired it instead of wiring directly to the element I left the high temp cut off in the wiring loop. I am thinking it will shut power off before there would be a problem. Everything seems to be OK..

Great looking bird! Spatching is the best method, IMHO, for cooking poultry. Gets you a nice even cook with great results!

I am curious to see how the mods work with the mes over the long haul. It would be nice to get the one at work over 260ish for chicken.
