Well Kevin.. Those there you just did, look "meaty" enough to me... What exactly are you expecting?
I mean I am happy with these but I've been to some bbq joints on your top 50 list and they seem to be sometimes another 5/8-3/4" thicker all the way around. Really making them "dino ribs" just wasn't sure if it all depends on how they are processed or if it can rlbe requested etc..or even the genetic difference of each cow I guess

Gotcha… I have no doubt those high-end places are hand cut in-house to be any thicker. I feel lucky enough to have even found some local to buy at all! Ask your butcher. That's my best advice.

I appreciate all of the likes guys! Now...next thing..who knows where I can get the REALLY fat beef ribs? These seemed kind of "thin" to me. Got these at the meat market in Lewisville Tx. Just found out Sam's stopped selling beef ribs and now I'm not sure where to go for some good thick ones. Any ideas guys!? Thank you!
I kind'a missed the real gist of the question.

Man, you have the thickest beef ribs available in your hands.
Those are fantastic Beef Plate, short ribs, the kind that sell for a premium in BBQ restaurants.
If you can source those consistently, I'm a very jealous man.

I may have you covered here. Costco in West Plano, TX seems to recently have started carrying beef ribs. Also it seems they are carrying BOTH Prime and Choice cuts!
I believe them to be plate ribs. I THINK the Prime are $5.99 a pound but that may be the choice cut. I know good while back I bought Prime from them for $4.99 a pound the week before the superbowl!

I was really considering getting some soon but I had to eat up 2 pork buts and a 22 pound turkey in my freezer AND work down the rest of my last year's hunting haul so the freezers are ready for the new hunting haul in October :D

Let us know if you score some from there and what you think. :)

I'll be giving my local costco a call!

If your local one does not have it then the one in West Plano is not too far from southern Lewisville and would be a simple trip down I35 -> East on G. Bush -> Dallas North Tollway. It is located pretty much at W. Park and Dallas North Tollway.
