Picked up 2 Briskets on Sunday,cut the smaller one down for some Pastrami( brining now) made the small point for dinner yesterday 

Started at 8:30 AM mini was holding at 200* had a pan with some veggies and 1 can beer 2 cans water.By 11:30 it was up to 225* steady till I pulled the meat out at 3:30. IT was 205* 

Not many pics still have the bigger piece to eat tomorrow.


Meat is moist and delicious
