I picked the rib eyes from Wild Fork and the eye round from Whole Foods. I used some dry age bags and kept them in my refrigerator for about 3 weeks. The rib eye I am grilling tonight and the eye round in a few days. I took the trimmings and made a few small burgers



I'll post pics of the cooked product later this evening

Hi Al,

As far as trim, I would guesstimate at 50% and weight loss about 25%, although I didn't weigh it.
 
Steaks were absolutely epic
