My 14lb brisket cooked in 11 hours, I've got it in the cooler with blankets. Supper is at 6 and its 9:30 now. I've had a brisket in the cooler for 6 hours and it was great, but 8.5 hours seems too long. Any suggestion? Thanks Chuck
If you have access to an oven, warm the oven to 180-190 and put the brisket in about 2 hours before you want to serve. That should slowly bring it back to temp.
