Spicy brown Deli mustard for me most of the time. Or plain'ol French's yellow mustard if I'm out of the deli mustard. I never use oil which in my opinion blocks the smoke flavor. And seeing that I am lazy I am mostly using my pellet puker these days and need all the smoke flavor I can get with it.

Honestly, there is no right or wrong way use what works for you.
