I constantly try to think outside of the box. So here's what I am thinking, I have a Brinkman Propane double door smoker and getting a real low temp. is near impossible, even turning down the gas flow. Now this is my thought to smoke killer jerky; I am thinking of putting some lumps of mesquite and lump charcoal above the propane burner in a foil covered pan with a bunch of wholes poked in the foil. Then I will put cold water in the pan above. When the temp drops too low I will repeat the process. Does this sound feasible?
