More poor man’s brisket

I know there have been a fair amount of chuck roast posts lately, but when you can pick it up on clearance, you gotta go with it.

Seasoned with SPOG, used some hickory chunks in the WSM, and we were off to the races. I got the smoker up around 250 with no water, and in about 2 hours, I was ready to wrap.

I wrapped the meat with two solid pats of butter and a healthy dose of Barnyard Dust seasoning (I have done this before with great results). About 1 1/2 hours later, the meat was about 200 and taken off to rest about a half hour along with the juices in the wrap.

Started slicing (I need to try pulling beef at some point but I love the slices), and great color, flavor, and texture.

We had some slices with sweet corn that I help sell at my parent’s farm and my wife’s favorite pumpkin ale to wash it down.

Not only do I think this was my best smoked beef, but my best smoke yet overall especially in the flavor and texture departments. The meat was juicy with a nice mix of smoke flavor along with seasoning while being super tender. This is what I want my future smokes to taste like. Thanks for looking!
 
I'm like you, I always check out the reduced meat section at the grocery. Years ago when I worked in a grocery store I had a butcher tell me that is the best time to buy meat as it was at its most tender. Not sure if thats true, but it helps on the pocket book. your "poor mans brisket looks great".

RE: clearance meat - I found a couple rib roasts last year for half price. Im with you guys - can't be passing that up!
 
Clearance meat is my jam lol!! That beef looks amazing, beautiful smoke ring and that natural au jus I bet is amazing. Nice job!
 
Looks really good. smoked 2 in the last 3 weeks. Never smoked one before. Man I have been missing out. Wife likes the slices and I like it chopped. I have vac packed some of both. I will definitely keep the freezer stoked with smoked chuck from now on.

Buckeye1: One of the local breweries makes this beer seasonally and we chances upon it as they already started putting it out this for this fall. My wife was thrilled so we got a6 pack of it. It’s pretty good for a pumpkin ale . If you ever get to try any Lancaster Brewing beers, they’re worth it (even if it’s a little early).😄😄😄
 
I have to try some Lancaster brews next time I'm in PA. With the Corona virus not traveling these days.

Looks like you did a great job!! I never thought about smoking a chuck roast. Definitely got to try one!
 
Also a big fan of the "clearance" section. There used to be a Whole Foods like grocery store by me that was soooo expensive. I would go the day before I had tickets to a 49er game and see what they had. Most times I would get a good deal on something tasty for 75% off.
