When you mop do you flip the meat and mop both sides?

Do you spritz with a bottle or baste with a brush?

Thanks just curious as to what others are doing.
 
whether right or wrong, I usually spritz hourly... I spritz then flip meat and spritz the other side.. to keep it from drying out... Then I mop sauce close to the finish.. Like I said right, wrong, or otherwise that is the way ive always done it. good luck
 
Honestly, I sparsely mop and have no problems. Normally , once after 4 hours and again right before foiling. Works great with ribs/butts. Not so sure about brisket yet.
