Kilo Charlie's Mississippi Meatballs

Started with making a batch of my tried and true meatball mixture. Instead of making a whole bunch of 2 ounce meatballs, these were about 5 ounces.

To make them Mississippi Meatballs, I covered them with 1 packet Au Jus Gravy Mix, 1 packet of Parmesan Black Pepper Ranch Dip Mix, 3/4 stick of butter and a handful of Pepperoncini Peppers.

Into the Pit Boss KC Combo at 250F.

At 250F it took about 60 minutes to reach 160F IT. No, they're not burnt.. that's the Au Jus Gravy Mix.

I cheated and used some instant Mashed Potatoes.. Roasted Garlic and Parmesan flavored to be exact.

Love it. I make the similar version with pulled beef or pulled pork, but this is a fantastic method in a fraction of the time ✔️✔️✔️. We're having a neighborhood block party next month and I may make a pan or two of these.

When Mississippi Pot Roasts first came around about 15 years ago, I played with beef roasts, pork roasts and even chicken thighs swapping out the Au Jus for Pork Gravy and Chicken Gravy respectively. I found the Spicy Ranch Dip Mix worked better on the chicken thighs.


You could make them the 2 ounce version.. heck they could even be made in the crock pot for that type of party. I'm betting you could even use frozen meatballs and make it even easier.
 
That looks mega tasty! Love the Mississippi roast flavor! Wonder how it would be if you mixed some of the au jus and ranch into the meatball?
I think that would be a fantastic idea... you'd likely need 2 packets of each .. one for the inside and one for the outside. You'd also have to be aware of the salt levels using that much.
