Smoke Meats Everyday

Hi all! I live in the Twin Cities area and got a Traeger pellet smoker as a gift last year, looking forward to picking peoples brains and getting advice on smoking meats as I am new to the hobby. Looking at doing some tullibees today or tomorrow if anyone has advice or recommendations on time or temp. Using the recipe posted by reinhard for temperature recommendations.

Welcome to SMF from North Texas! I am a transplant from West of the Twin Cities. Search the forum for Smoking Fish recipes. High Level Suggestions:
- Smoke at 160-170 (make sure you have an accurate thermometer)
- Find a good brine/marinate you like (sweet, savory, sweet and savory, etc...)
- Start with a light flavored wood (I prefer Alder) before moving into stronger flavored woods
- Make sure you have an accurate thermometer for checking fish IT Temp
- Smoke to IT temp not time
