We were trying to figure out something for dinner we hadnt had in a while. We threw around a few ideas and landed on a mini Thanksgiving.
We had a turkey breast roast (boneless half breast) in the freezer. Defrosted and pulled it from the fridge this afternoon. Gave it a dusting of Meat Church Gospel and Cuisinart Bourbon Molassas rub.
Fired up the MES to 275 and once it was hot, threw in some apple chips. Tonhelp crispin the skin a bit, whenever I loaded chips, I basted the skin with a little bit of olive oil.
Beimg a beautiful day of about 82 this afternoon, sat on the deck amd sipped some Basil Hayden while the bird cooked up.
Breast hit 155 amd out of the smoker to the counter it went for a rest. Once rested, sliced it nice and thin
As the breast rested, made a traditional roux and broth gravy. Since I didnt have any turkey drippings, I added a little bit of both rubs to the gravy to carry over the flavor. I also used some bacon fat for the roux for the hit of smokiness.
Wife made some mashed taters, threw some rolls in the oven and steamed up some green beans
This hit the spot for dinner tonite and theres eniugh leftover turkey for sammiches for lunch tomorrow
