steaming around the collar. He inspired me to start making dried beef and this is his recipe but I bet he never thought somebody would come along and desecrate it like this
I've recently started making Migas for Tracy being that it's one of her favorite Mexican meals. Just so happens I've developed a fondness for it to but always manage to work some tasty meat into it. Sorry, but it's just gotta have meat. Well, I got home from my terribly long 15 minute work day this morning and started looking through the freezer for something to toss together for breakfast. Saw the dried beef but had passed a couple Mexican restaurants on the way home that kinda made me want to lean that direction. Decided to go for it and come what may.
Cut up some green onions, red bell pepper, purple onions, a jalapeno, add butter and garlic
Let the veggies cook down just a bit then add the dried beef and a fresh Roma tomato that was diced up
Let that simmer for a few minutes and crack a couple eggs into the skillet
Cook eggs till they are just starting to firm up and crunch up a handful of tortilla chips into the skillet. There's just no way to have a nice looking pic of eggs that are being scrambled
Plate the Migas, top with shredded cheddar and a dose of homemade fire roasted salsa and serve with a couple of warm torts
As odd as it may sound, this was really, really good. I was quite surprised that it came out as well as it did. Obviously I wasn't expecting a disaster or I wouldn't have done it but it did come together far better than I anticipated.
