i have a stack on metal gun cabinet that i would like to convert to an electric smoker. i have all the stuff and knowledge to build it. just not sure what kind of metal it's made out of, plus it's painted on the inside wich i am not a fan of.. any input would be great..

Pics? Most likely steel however those things are often fire insulated with some potentially nasty stuff. Not sure if you are talking safe or cabinet

The Stack on's are just a steel cabinet with a locking door. As long as you strip the paint and repaint the outside only with high heat paint you should be golden. Keep the inside bar metal and season it like you season your cast iron pans with oil and heat until it forms a protective rust barrier.
Post pictures along the way.

It i steal but has a powder coat on it. I would set it up on some rocks and burn it out really good. Then I would oil it up just like you would a black stone and fire it up again, then repeat.
