Bet that’s gonna be great on the rotisserie! I’ve got a chuck roast in a basic brine right now that I was gonna do burnt ends with but I ran outta room doing ribs. There’s always tomorrow I guess! Can’t wait for the after pics!

I am watching those onions in case I need to cut them off early they may start to ride like a bad Toyo tire!
 
First modification ... emergency brake to stop onions spinning...

Probe tender??? Cook till probe tender. Atleast thats what I would do. But who am I to say.
 
fire was in an expanded metal basket and I cooked with a dome lid....

It was too late for dinner, but rest assured this will make fine Sunday Sammies... ok I am off to work to get OT!!!
