MES problem

Hey everyone!!! So today I used my smoker for the first time since replacing the control module on my MES 30 model 20071914. Set the smoker to 275F and the smoker kept heating continuously without stopping. Smoker said it was 300F. Heating element didn’t shut off at temp setting. Wondering if anyone knows what might be wrong? Is new control module bad? What is the penny sized round thing on the left inside back panel and what is the small about 1/2” probe looking thing sticking out of the inside back right of the smoker? Thanks for any help.
 
Probe is the thermometer, disc is the cutout to keep from overheating. Have you checked actual interior temp with a digital thermometer? MES is notorious for being off.

What reads the internal temp of the smoker and controls the control module to turn the element on and off? The disc is just a safety switch correct?
 
The probe in back should be reading what your control is set at. They are usually wrong, that is why you should compare with a "tested" digital thermometer. The meat probe usually is off also. Correct on the safety disc.

I had the exact same problem, mine was intermittent. One smoke I’d have a temperature overrun the next dozen smokes no issues. Masterbuilt replaced my Power Control Unit and I haven’t had an issue since. It’s located on the bottom of the smoker.

 
Like's been said above:
The flat disc is a safety cut-off.
The thing that looks like a little toggle switch is the Thermo-Sensor.
If you have an accurate Therm (Not the built in) giving you those readings, don't let it go above 325°. If it tries to go above 325°, shut it off & call Masterbuilt. You would probably need a new controller.
I'd start worrying when it goes past 300°, and the element is still red hot.
