MES MB20072816 Not Heating

I bought my MES140B from some guy who won it at an auction a couple years ago and never used it. So basically brand new. I've used twice now and the general pattern is as pictured here. This can't be normal! It says its heating up to 275 and shuts off, that is exactly why the graph is shaped like that. Is there a way to calibrate these things or do I have to get a new circuit board or what what you guys suggest?

Oh and this chart starts after an hour of preheating.

Based on the two different threads with your graph and info, what did the temp get up to during the hour of preheating to make you want to put in the chicken? Since the controller was cycling and the heating light didn't stay on constantly.

I didn't measure the preheat, I just waited an hour assuming it's gotta be in the ball park.

I'm going to menards tomorrow to get another thermometer just for the ambient temp. I ended up pulling that chicken and putting in oven to finish just to try to crisp up the skin a bit, and at 400 degrees the thermometer was reading 300 degrees at most. So that ambient temp reader is deeply flawed, as my oven is pretty spot on. I've baked some delicate items that are pretty finnicky when it comes to temps and they come out great.
