Rigged up my MES to cold smoke some cheese. Worked ok, but the MES cycled off and not much smoke then. 1st I ran the MES at 165 then all the way up to 225 to get more smoke. It was about 50 degrees out here today and the cold smoker (Masterbuilt 7 in 1 smoker) never got over 80 degrees. I think for future cold smokes I might use a hot plate that way the element will always be on and always smoke.
